Yellow Tea

A rare Chinese category in which lightly oxidised leaves are gently 'sealed' under cloth — mellow and golden.

After fixing, yellow tea is wrapped in damp cloth for 'menhuang' — a slow non-enzymatic yellowing. The result is a mellower, sweeter, less grassy version of green tea. Junshan Yinzhen and Huoshan Huangya are the famous names.
