Terroir

The combination of soil, altitude, climate and tradition that gives tea from a specific place its signature character.

Borrowed from wine, terroir is why a Darjeeling can never taste like an Uji and why vintage matters. It encompasses geology, weather, sunlight, neighbouring flora, and the human know-how passed down in a region.
