Tasting

Hou Yun

/HOH-yoon/

'Throat-rhyme' — the sensation of the tea's finish descending and lingering in the throat.

A treasured marker of high-mountain Wuyi oolongs and aged pu-erh. The throat is left feeling cool, open, slightly perfumed. A tea with hou yun is said to 'go deep'; a tea without it stops at the tongue.
