Steaming

Fixing tea leaves with high-pressure steam — the Japanese way of stopping oxidation.

Steaming locks in chlorophyll and amino acids, giving Japanese green teas their vivid jade colour and seaweed-umami profile. Sencha, gyokuro, and matcha base (tencha) are all steamed.
